5 Minute Breakfast Recipes

Here are two 5 Minute Breakfast Recipes from The River Morning Show that will make your schedule and your stomach happy. One’s a sweet toast option, the other’s a salty toast option. What you need: 

  • 1/3 cup whole milk
  • 2 large eggs
  • 1 teaspoon Pure Vanilla Extract
  • 1/2 teaspoon Cinnamon
  • 1 Tablespoon butter, softened
  • 4 slices sandwich bread, cubed
  • 1 Tablespoon of toppings per mug
  • powdered sugar and maple syrup for serving

What you do: Mix together milk, eggs, vanilla, and cinnamon. Set aside. Lightly grease the inside of 4 microwave safe, 8 oz. mugs with softened butter. Divide the bread evenly among the mugs. Take half your bread by one mug and layer it with toppings until full. Pour milk mixture over each mug, evenly. Microwave on high for approx. 1 min. 15 sec. Watch it! You don’t want it to explode. Top with maple syrup, powdered sugar, or any extra toppings!

What you need: 

  • 1 Tablespoon unsalted butter
  • 1 slice of bread
  • 1/2 ripe avocado (skinned, peeled, seeded, thin-sliced)
  • 1 Tablespoon oil
  • 1 Teaspoon sesame seeds
  • 1/4 Teaspoon red pepper flakes
  • Salt & pepper to taste

What you do: Toast your bread. Spread butter evenly across your piece of toast. Mash your avocado up or leave thinly sliced and spread across your toast. Drizzle olive oil across next. Then top with a sprinkle of sesame seeds and your red pepper flakes. Take a pinch of salt and pepper to add some flavor. If you have an extra few minutes and want to fry an egg for the top, that’s a great addition, too! Serve with a glass of orange juice for something sweet to go along with your salty and delicious avocado toast.
